Grilled Peach Pizza with Burrata + Honey Balsamic Drizzle

And here we have…pizza. Because what could possibly be better than bread smothered with cheese and then topped with more cheese? Can’t think of one damn thing. Happy Hump Day.

3 cloves garlic, minced
2 tbs olive oil
1 pizza dough (I use Trader Joe’s Honey Wheat because it’s amazing)
2 cups shredded mozzarella
3 oz burrata, crumbled
~1 lb ripe peaches
2 tbs butter
1 cup balsamic vinegar
1/4 cup honey
3 cups of lettuce/spring mix/arugula

  1. Preheat the oven to 450 degrees. Prepare the pizza dough according to package directions, most likely you’ll let it rise and then stretch it over a pizza stone or greased basking sheet.
  2. Mix the garlic and olive oil together, and distribute over the pizza dough.Bake dough in the preheated oven for 10 minutes.
  3. While the dough is baking, grill the peaches. Slice the peaches, and rub each side with butter (this can also be done with canola oil if you prefer.) Grill the peaches over medium-high heat for 3-4 minutes on each side.
  4. Add the vinegar and honey to a small saucepan, and bring to a boil. Reduce to a simmer, and let the mixture thicken for about five minutes. Remove from heat.
  5. Remove the dough from the oven, and top with the mozzarella. Bake for another 10 minutes, until the cheese is melted and the dough is golden brown.
  6. Remove the dough from the oven once more, and top with lettuce, grilled peaches and burrata. Drizzle glaze over the pizza.
