Skinny Almond Butter Pretzel Bars (No Bake!)

…do these still count as “skinny”¬†if I ate half a bag of pretzels while making them? Yes, right?

That’s what I thought.

2 cups pretzels + extra for topping
1 cup oats
1 cup dates
6 tbs almond butter
2 tbs honey
1 tbs almond milk
1 cup chocolate chips
1 tbs coconut oil

  1. Line an 8×8 pan with foil or parchment paper.
  2. Add the oats to the food processor, and pulse until the oats resemble flour. Add the pretzels and pulse until they are broken into small pieces.
  3. Then add the dates, almond butter and honey, and mix until well combined. The dough should stick together, but if not, add a little almond milk at a time until it does (I added almost a full tablespoon but you may need more or less.)
  4. Press the dough into the prepared pan.
  5. Add the chocolate chips and coconut oil to a microwave safe bowl, and heat in 30 second increments, stirring in between, until fully melted.
  6. Pour the melted chocolate onto the bars, and spread using a spatula. Sprinkle broken pretzels on top.
  7. Refrigerate for at least an hour before cutting and serving. Keep leftovers in the fridge.
