Healthy Peanut Butter Banana Breakfast Muffins

So last weekend I made these healthy breakfast muffins to serve two very different life purposes:

  1. For me and some girlfriends to munch on during our way to Napa before wine tasting so that no one gets too drunk and can’t remember winery #2 (not that that’s ever happened to anyone before, I’m sure.)
  2. For me and my crazy boyfriend to eat during the 8 mile hike we went on over the weekend. So that we (I) don’t die of starvation.

See what I mean? They’re versatile. What do you need these for in your life?


2 large ripe bananas
¼ cup honey
1 cup Plain Greek Yogurt
1 tbs apple sauce
1 large egg
¼ cup almond milk (or milk of your choice)
2 tsp vanilla extract
¾ cup peanut butter
1¾ cup whole wheat flour
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
¼ cup chia seeds

Makes 12 muffins.

  1. Preheat the over to 375 and spray a muffin tin with cooking spray.
  2. In a medium bowl, mash up the bananas using a fork until smooth and creamy, and add the honey, Greek Yogurt, applesauce, egg, milk, vanilla and peanut butter. Mix until well combined.
  3. In a large bowl, mix together the dry ingredients.
  4. Add the wet ingredients into the dry mix well.
  5. Drop the batter into the prepared muffin tin, and bake for 13-15 minutes.
  6. Go hiking. Or drinking. Or whatever.
