Pantry Paleo Brownie Bars

Ok don’t judge me for making these – I am not paleo but my sister Candy has decided to go Paleo for the week to kickstart a healthy summer – even though she’s already super healthy…I don’t know. So anyway – I am trying to be supportive so I made these for our lake weekend.
They are super fast and simple, and I’m calling them Pantry bars because literally everything you need to make them is right in your pantry. Plus, you can    substitute whatever nuts or seeds or nut butter you have (or prefer!) – like chia seeds or walnuts or almonds. The best part about these bars? They taste like fudgey, gooey brownies with a crunch. Do yourself a favor and definitely make these.

1/2 cup raw peanut butter
1/2 cup dark chocolate, chopped
2 tablespoons coconut oil
1/4 cup pistachios, chopped
1/4 cup pecans, chopped
2 tbs sesame seeds, chopped

Make the brownies
1. In a small saucepan over medium heat, combine the peanut butter, dark chocolate and coconut oil until melted.
2. Remove saucepan from heat and mix in the pistachios, pecans and sesame seeds, saving about a teaspoon of each to sprinkle on the top.
3. Press parchment paper into a small baking pan, and pour mixture into prepared pan. Refrigerate for at least 2 hours. Cut into squares. Snack.
