Chocolate, Zucchini + Buttermilk Muffins

Wanna hear something super random?


When I’m trying to find inspiration to cook something, I’ll look in my fridge to see what I have and try to combine ingredients to make something yummy. Um, that wasn’t the random part. Guess what I had in my fridge this week?

If you guessed dark chocolate, buttermilk and zucchini, you’re right!

I mean if you’re me, I guess its not that random. I literally always have chocolate in my pantry or freezer just in case because YOU NEVER KNOW. Buttermilk was for last Saturday’s ricotta buttermilk pancakes (don’t judge me I was trying to impress my boyfriend’s mom, Why yes, I do make breakfast like this all the time for your son! Just kidding but not really.) And zucchini? That was a happy accident. I meant to buy cucumbers but those little guys all look the same. So oops! There you have it. The three most random things you could possibly have in your kitchen arsenal.

I’m not even gonna try to be like, you can make this with shit you have in your fridge! Because no you cannot. But you can, however, make this with shit you buy from the grocery store. That is true.


Anyways, this is the recipe I used, and they turned out super moist (gross word but totally applicable) and lovely. I went with dark chocolate chips because dark chocolate has antioxidants. No I’m just kidding, I did that because I love dark chocolate, the antioxidants were a bonus. I literally didn’t even think of that until just now. And instead of using paper cups, I folded up parchment paper to made my own paper cups. But again, you’re going to be at the store anyways because I bet you $100 you don’t have all of these ingredients in your fridge, so you can add paper cups to the list. But please don’t not make this because you don’t have the ingredients. Buy the ingredients, and then make these amazing buttermilk pancakes from Half Baked Harvest with the extra buttermilk. And actually then make zucchini pancakes, too! You know, with the leftover zucchini. And with the extra chocolate? That’s not a problem I encounter very often. I’d stick that in the freezer for a rainy day. Oh, its raining right now? Even better.
