Easy Green Goddess Dressing


When I tell people I make my own salad dressing, they usually get all crazy about how hard core (wrong choice of words?) that is. Often, what I mean is that I drizzle some balsamic and some olive oil on top of a few pieces of romaine and call it a day. Not very hard core. Secret is out.

This Green Goddess dressing is much more interesting, but it’s also very easy. You likely have most of the ingredients in your fridge already, unless you’re like me and you haven’t gone grocery shopping since you got back from Nashville and you basically have five different types of pickled vegetables and way too much Bud Light to be a 30 year old.

In that case, it’s probably time to hit the store (*Note to self.)

¾ cup plain nonfat greek yogurt
¼ cup milk (I used whole)
½ cup fresh parsley
½ cup green onions white + green parts
½ cup fresh basil
1 clove garlic minced
2 tablespoons lemon juice
½ teaspoon salt

Add all ingredients to a blender or watertight food processor. Blend until smooth. If you’re storing this in the fridge, shake or stir before each use as it will separate.
