Spicy Watermelon Salad with Sesame & Soy Vinaigrette

Ok I know watermelon and sesame sounds weird, but you have to trust me on this one. I just spent 24 hours in Vegas and had 2 incredible watermelon salads (excessive?), one of which inspired this recipe.

We took my tiny munchkin sister to Vegas for her 21st, which I have to admit was pretty different than when my sisters and I turned 21 in Vegas (um, about 9 years ago) but still a blast. My top highlights include this salad (obvi,) my sister Candy showing up last minute in the hotel bar and surprising everyone, and 3AM nightclub swimming. I mean when it’s 85 at 3AM, what other choice does one have? I would divulge additional details here but as we all know, Vegas rules apply.

Ingredients
Salad
1/2 watermelon, cubed
2 cups arugula
1 serrano chili, sliced
1 tbs sesame seeds
1 handful mint leaves

Vinaigrette
1/2 cup rice vinegar
1/4 cup toasted sesame oil
3 tbs soy sauce
2 tbs tahini
1/2 tsp pomegranate molasses

  1. To make the vinaigrette, combine all ingredients together in a small saucepan, whisk together, and bring to a boil. Reduce the heat, and let the mixture simmer and thicken for 5 minutes.
  2. Chill the vinaigrette for 30 minutes to an hour.
  3. To assemble the salad, toss the dressing with the watermelon, chili, and arugula. Top with the sesame seeds and mint.
