Happy Almost Weekend + Homemade Peanut Butter Granola

granolaNext week is finals so I have papers to write and exams to study for this weekend, but in between all of that, I plan to do some serious cooking and some serious soul-searching.

When I first started cooking, it really stressed me out. There was an incident with an ex-boyfriend and almond-crusted chicken that frankly didn’t work out, and it ended with the smoke alarm going off, followed by lots of tears on my part. That was back when I cried over stupid things like burned almonds and raw chicken. Now I know better. Now I just order Postmates.

Anyway, that phase didn’t last long, and cooking pretty quickly became the thing that calmed me down at the end of the day. Back before I started the whole grad-school thing, I would come home after a day of work, open a bottle of wine, and unwind by cooking a big, complicated meal with lots of chopping and sizzling and basically anything that would distract me from whatever went on that day. I still find chopping garlic and tearing lettuce to be incredibly therapeutic.

So this weekend, in between all of my studying and paper writing, while I have my nice, quiet apartment all to myself, I plan to post up in my kitchen and just cook. And think. About life and work and school and what the hell I’m doing next.

That’s all. Oh look, I made you some Peanut Butter Granola. Enjoy 🙂

2 1/2 cups of rolled oats
1/3 cup peanut butter
2 tbs raw honey
1 tsp vanilla

  1. Preheat the oven to 350 degrees and cover a baking sheet in parchment paper.
  2. Heat the peanut butter, honey and vanilla in a small saucepan over low-medium heat, until well combined.
  3. In a large bowl, combine the oats with the peanut butter mixture, and mix well.
  4. Using a spatula, press the oats onto the prepared baking sheet.
  5. Bake for 20 minutes, and then flip the granola, and bake for another 10-15 minutes.
