Apple + Oatmeal Bread with Vanilla Bourbon Glaze

You guys its the first week of fall! Who’s excited?? Every food blogger in the universe, according to my Twitter feed. But with good reason! Pumpkin spice lattes are appropriate to order again. We can break out the flannel shirts that have been hiding in our closets all summer long. Football starts (or so my boyfriend tells me)! Thanksgiving is next month! And finally, I can start making ALL the fall recipes. Like this apple oatmeal bread. If I were you, I’d make this immediately. Maybe even top it with some vanilla ice cream if you’re feeling crazy. Happy fall!  

2 cups all-purpose flour
1 cup oatmeal
1 pinch salt
1 teaspoon cinnamon
1/2 cup granulated sugar
3/4 cup packed brown sugar
1/2 cup vegetable oil
2 eggs
1/2 cup Greek Yogurt (I used plain but vanilla would likely be fine, too, if that’s what you have)
1 cup applesauce (I used unsweetened, if you only have sweetened, be sure to lower the amount of sugar you use above)
1/2 teaspoon vanilla extract

Bourbon Glaze
1/2 cup butter
1/4 cup brown sugar
1/4 cup milk
1 teaspoon vanilla extra
1 tablespoon bourbon (I used Jack Daniels)

Make the Bread

  1. Preheat the oven to 350. Butter or grease a loaf pan.
  2. Mix the dry ingredients together in a large bowl. In a small/medium bowl, mix together the wet ingredients.
  3. Add the wet ingredients to the dry, and mix until just combined.
  4. Pour the batter into the prepared loaf pan, and bake in the preheated oven for 40-45 minutes, until an inserted toothpick comes out clean.

Make the Glaze

  1. In a small saucepan, melt the butter over medium heat. Add in the brown sugar and stir until sugar has dissolved. Watch the pan carefully, as butter and sugar can turn on you quickly and burn.
  2. Add the milk, and bring to a boil slowly, and boil for about 2 minutes.
  3. Remove from heat, and stir in the vanilla and bourbon. Pour over the apple cake. The glaze will firm up as it cools.
