Healthier Whole Wheat Strawberry Pancakes

Who says nothing good happens after midnight? That’s such BS. What about 1AM Mel’s diner trips? Or that last tequila shot that makes you a really good dancer? Or the final hour at the bar when they start playing 90s throwbacks because who cares? Or, per my Saturday night, the idea to make strawberry pancakes which hit me at approximately 1AM, after an entire carafe of sake and a dirty martini.
Me to my boyfriend right before we fall asleep: “I’m going to make strawberry pancakes for breakfast.” Him: I actually have no idea what he said because of the aforementioned reasons but I absolutely woke up in the morning and made these pancakes. And they were delicious.

Slightly adapted from this recipe.

Ingredients-
1 cup low fat milk
1 cup whole wheat flour
2 tsp honey
1/2 tsp baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 tbs butter, melted and cooled
1/2 tsp vanilla
1 cup fresh strawberries, diced with stems removed
Maple syrup for serving

Make the pancakes-
1. In a large bowl, combine the dry ingredients (flour, baking powder, baking soda, salt).
2. In a smallish bowl, combine the wet ingredients (milk, honey, egg, butter, vanilla).
3. Add the wet to the dry, and whisk by hand until just combined. Do not over mix.
4. Gently fold in the strawberries.
5. Heat and oil a griddle or skillet on medium/low heat.
6. Start with a test pancakes (IDK, is that just me? Seriously, do a test pancake. The first always looks terrible).
7. Using a 1/4 measuring cup, drop the pancake batter onto heated griddle. Flip when edges brown or when bubbles form and stay. Repeat.
8. Top with maple syrup, powdered sugar or more fresh strawberries.
