Easy Baked Falafel with Sweet Potato Fries

falafel2.JPGOK so hear me out on the sweet potato fries. I know it sounds weird…But does it really? Who hasn’t stuck a few french fries in their chocolate milkshake before? Pressed a few fritos into their sandwich? Thrown some ketchup on their eggs?

I was just having one of my cravings (no Mom, I’m not pregnant) and voila! Falafel and sweet potato magic. Just don’t forget the tahini to tie it all together. Cause without it, the whole thing just wouldn’t make sense. Like, it would be weird. Which it totally isn’t.

Because, tahini.

Ingredients
6 mint leaves
1 tablespoon parsley
2 cups chickpeas (I used canned but feel free to use fresh or whatever you like)
1 small sweet onion
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon flour (I used wheat)
1 teaspoon baking soda
Salt
1 tablespoon bread crumbs (optional)

Toppings
Tahini
1/2 cucumber, chopped
1 roma tomato, diced
1 garlic clove, diced
1 teaspoon chopped oregano
1 teaspoon olive oil
Sweet potato fries*
Lettuce (for wrapping)

Make the falafel.

  1. Preheat the oven to 375 degrees.
  2. In a food processor (or blender) add the herbs, and pulse to combine. Then add the chickpeas, onion, olive oil, cumin, flour, baking soda and salt. Blend until combined, but don’t over-mix. If the dough is too wet, add the bread crumbs.
  3. Use your hands to roll the dough into about 10 small rounds, place them on a greased cookie sheet and flatten slightly. This will help them cook more evenly without burning.
  4. Cook for about 20 minutes total, flipping them halfway so they can brown on the other side.

Make the toppings.

  1. Mix together the cucumber, tomato, garlic, oregano and olive oil. Let the mixture sit until falafel is cooked, so the flavors can meld together.
    * To make the sweet potato fries, chop a sweet potato into thicker matchstick pieces. Toss with a tablespoon of olive oil, a teaspoon of corn starch, salt and pepper. Bake at 400 degree for around 20 minutes, until golden and crispy.
  2. Assemble the falafel by spreading the tahini onto the lettuce, adding the cucumber mixture and topping with falafel and sweet potato fries. Enjoy!
