Heart-shaped Dark Chocolate Covered Almond Butter Bars

Today I’ve made you some heart shaped almond butter bars covered in chocolate, in order to celebrate this weekend’s holiday.
And no – I’m not talking about Valentine’s Day, because I think we can all agree that President’s day is so much better.
Let me explain.
Have you ever found yourself bummed out because you were alone on President’s day? No, you haven’t. Because that would be ridiculous.
Have you ever thought, Shoot, I should really wait to break up with my boyfriend until after President’s day… Nope. 
Or, I can’t believe my boyfriend is spending President’s Day with his friends. Absolutely not. Cause then you could just hang out with your girlfriends and that would be awesome. 
But everyone is like, Random three day weekend in dreary February? Score! Ok so I don’t know if anyone would actually say “score” but they’d say whatever the cooler, excited equivalent of that is. Maybe Nice! Or Sick! Idk. Just go with it.
I mean, has literally anyone ever been like, I hate three day weekends. Better go eat an entire pint of Ben & Jerry’s and watch The Notebook on repeat.
Ya, no. Because, again, that would be silly. There’s only one day a year that its socially acceptable to do that and its not President’s day.
So, we’re all in agreement then? Is everyone’s cool with a little February-three-day-weekend action?
That’s what I thought. Enjoy the weekend, everyone.

Ingredients –
3 1/2 cups almond peanut butter
1/2 cup butter, softened
3  cups powdered sugar
1/2 cup brown sugar
1/2 Tbsp vanilla
1/4 teaspoon salt
6 ounces dark chocolate chips

1. Mix the almond butter, butter, sugar, vanilla and salt together in a large bowl.

2. Press into an 8 1/2 x 11 pan, lined with parchment paper.

3. Cover with melted chocolate. Let harden in the fridge for about 20 minutes.

4. Cut into hearts or squares or whatever kind of vibes you’re feeling this weekend.
