Farro Breakfast Bowl with Poached Egg & Sausage

So lately all these food blogs are like, Farro is sexy! Farro is quinoa ‘s hotter cousin! Farro is the new black! So finally I was like OK I’ll try it stop harassing me.
And ya know what? Its actually really good. Its softer than quinoa but has the same whole grain health benefits, which is cool if you’re in to that sort of thing.
So anyway, I made this breakfast bowl, and it was delicious. Really flavorful and filling. Its also really easy to make and fast so if you’re half asleep or whatever you could probably pull it off. I mean probably. I’m not sure what you’re like half asleep. If you’re like, half functioning, then go for it. If you’re like my boyfriend and you’re a complete zombie in the morning then please don’t go for it. Or don’t blame me when the pot boils over and you burn down your studio
That’s all I’m saying.

2 Eggs
1 cup farro
3 cups chicken broth
1 bay leaf
3 sausage links (I used turkey)
1 sweet onion, diced
1 tablespoon olive oil
3 basil leaves, chopped
Salt & pepper

  1. Boil some water. Poach some eggs. If you don’t know how to poach eggs, check out this video that can explain it much better than I ever could.
  2. Make some farro according to the directions on the package. They’ll probably be something like: 1 cup farro + 3 cups water, bring to boil, then cover and let simmer for 20 minutes. Except, instead of water, use chicken broth. And throw a bay leaf in there.
  3. Heat oil in a pan, and saute the onion for a few minutes. Then throw the sausage, casings removed and crumbled, into the same pan. Cook until the onions are caramelized and soft, and the sausage is cooked through.
  4. Layer the farro (remove the bay leaf!), then the sausage and onion mixture, then place a poached egg on top. Top with salt and pepper, and basil.Breakfast bowl
