Sweet Potato Toast with Queso Fresco & Crispy Sage

Are you ready for something ridiculously easy and wonderful?

Its Sunday morning. Of course you are.

As you may know, toast is one of my favorite things ever. Its up there with dark chocolate, burrata and extra dirty martinis. So it feels entirely natural for me to hop on the artisanal toast train and make you something that is both incredibly simple and SO flavorful. I know its not avocado toast – but give it a shot. It won’t disappoint. IMG_0193






1 large sweet potato
2 tablespoons olive oil
1 tablespoon garlic salt
1 tablespoon canola oil
1 french baguette (or whatever kind of bread you prefer)
1/2 cup queso fresco
5-6 fresh sage leaves
Salt & pepper

  1. Preheat oven to 400 degrees. Peel and dice sweet potato. Toss with 1 tablespoon olive oil and garlic salt. Bake for 30 minutes.
  2. Thickly slice baguette. Drizzle with remaining olive oil and salt and pepper. Broil or toast until golden brown (about 2-3 minutes under a broiler). Keep watch, since it will burn quickly!
  3. While the toast is toasting and the sweet potato is cooking, fry the sage. Heat the canola oil in a small pan, and fry the sage for about 1-2 minutes on each side. Remove from heat and place onto a paper towel to drain the oil.
  4. When the sweet potato is soft, remove from the oven and mash with a fork until smooth.
  5. Spread the sweet potato onto the toast, top with queso fresco, sage, and salt and pepper.
