Dark Hot Chocolate with Homemade Marshmallows


What a week, you guys. Seriously. What a freaking week. Midterms are over (no one died, thanks for asking,) work feels slightly out of control, and while I really just want to curl up in bed and sleep until the weekend, unfortunately I don’t think that’s an option.

Do you ever have weeks or moments like that? You know, when you just kind of wish everything would chill out for a moment but instead everything wants to go 100 miles per hour and you also realize the likelihood of things slowing down is slim to none, so you just have to keep going?

Well, it’s not perfect and it won’t fix everything, but here is my short term remedy for that: I suggest you make yourself a ridiculously oversized mug of hot chocolate, drop in some marshmallows, curl up with your favorite book or your favorite person or your favorite Netflix show (hey, whatever,) cut yourself some slack, and just chill it out for a moment. You’re human. You can’t do it all. It’s literally not even possible.

But it is, however, almost Thursday, and looking back, we’ve made it through every week we’ve encountered so far, right? I don’t know about you, but I’ll take those odds.

Hot Chocolate
2 cups almond milk (or whatever kind you prefer. Whole milk would make it creamier – but the melty marshmallows added a good consistency so I’m not lying when I say you can really use whatever you like).
1/3 cup dark chocolate chips
1 teaspoon unsweetened cocoa powder
1/2 teaspoon condensed milk
Pinch of salt

I used this recipe, and halved it. Let the marshmallows sit for 3-4 hours before cutting into them. They’ll melt when they hit the cocoa, but that’s the opposite of a problem.

Make the Hot Chocolate

  1. Heat the almond milk in a medium saucepan over medium heat until just simmering.
  2. Turn heat to low and stir in chocolate chips. Keep stirring until all the chocolate has melted, being careful not to left the chocolate burn.
  3. Stir in cocoa powder, condensed milk and salt.
  4. Continue stirring until everything is well combined. Pour into mug, top with marshmallow, and enjoy.

Makes enough for two.
