Mini Apple Hand pies with Bourbon Cream

To continue on with the celebration of fall, I made you mini apple hand pies! With bourbon whipped cream! Get ready to conjure up nostalgic images of childhood as you make these.

Minus the bourbon part.

Unless you had that kind of childhood.

In which case, never mind. Just go make yourself some hand pies.

Apple hand pies
2 cups apples of your choice, diced (I used Gala but love Granny Smiths, too)
2 tablespoons all-purpose flour
1 teaspoon cinnamon
1/4 cup sugar
1 tablespoon lemon juice
Egg wash (1 egg whisked with 1 Tablespoon water)

Pie Crust
I used this recipe and doubled it, or you can use Pillsbury’s pre-made crust which would work just as well and save you some time:)

  1. Preheat oven to 425.
  2. In a large bowl, combine the apples, flour, cinnamon, sugar and lemon juice. Mix until the apples are evenly coated.
  3. Roll out your pie dough (or fold it out if you’re using Pillsbury’s – no judgement here) and cutĀ small, even circles. I used the rim of a glass which worked well.
  4. Flour a baking sheet, and put half of the circles onto the sheet.
  5. Spoon filling into the center of each circle, careful to leave a small ring of dough exposed. Don’t over fill or the pies will burst.
  6. Place a second dough circle on top of each filled circle, pressing the edges together. Using a fork, crimp the edges of each hand pie. Slice tiny vents into each pie.
  7. Brush each pie with egg wash.
  8. Bake for 15-18 minutes. Top with bourbon cream (recipe below).

Bourbon Cream*
2 cups heavy whipping cream
1 teaspoon granulated sugar
1 tablespoon Bourbon (I used Jack Daniels)

  1. Using a hand mixer, mix the cream until stiff peaks form.
  2. Fold in sugar and bourbon.

*If you’re like me and you don’t have a hand mixer, throw a stainless steel bowl and whisk in the fridge for half an hour. Pour in the cream (make sure it’s very chilled) and whisk until you feel like your hand is going to fall off and this is never ever going to work and google lied to me and can I make whipped cream in a blender and OH LOOK SOMETHING IS HAPPENING! (About 12 minutes). Gently foldĀ in sugar and bourbon.
