Balsamic-Pepper Plum Reduction Sauce

Don’t judge me but I may or may not have eaten this sauce with a spoon.

Plum sauce

I couldn’t help it, OK? I love summer stone fruits and was looking for something I could make quickly and easily, and there’s nothing easier than throwing a bunch of simple ingredients into a pot. Which is all you have to do to make this gorgeous sauce.

I’m not gonna lie, initially I was worried the sauce would be too sweet, but Food52 hasn’t steered me wrong yet and the pepper really balances out the sweetness.

Ingredients –

plums (I used the purple guys)

1/2 cup balsamic vinegar

tablespoon brown sugar

sprigs fresh thyme, leaves removed from sprig

teaspoon pepper

  1. Roughly chop the plums, and add them into a cast iron skillet with all ingredients.
  2. Bring to a boil, and reduce to a simmer, stirring constantly to avoid sticking.
  3. Simmer until vinegar has reduced by half, plums will still be chunky.
  4. Put on literally everything you make for the rest of your life (or at least until the end of summer).
